Japanese Knotweed is a nutritious invasive plant. In this workshop, we will make tangy refrigerator pickles with knotweed, taste shoots raw with different sweeteners, and learn how to identify and forage this valuable, but highly invasive garden weed. Take your jar of pickles home with recipes (both savory and sweet) and knotweed foraging guide pages. Ages 12yrs and up. Instructor Rachel Goclawski is a Massachusetts Certified Educator and Naturalist, Programming Partner with the Museum of Natural History, Sudbury Valley Trustees, and Scouts of Eastern MA.
