Knife Skills with Matt Card: Techniques, Tools and Practice

Learn how to use a Japanese vegetable cleaver in this hands-on introduction to Milk Street knives and knife skills. In addition, you will also learn how to handle a Western chef's knife, a Chinese vegetables cleaver, a serrated prep knife and a mandoline—and when to use each. We'll discuss the anatomy of each knife, from tip of blade to heel, and knife sharpening and care so you understand the differences in how make affects cooking. You will practice skills by experimenting with a variety of knives to explore how different tools affect shape, and therefore, flavor. By using different knives for the same job, you will also walk away knowing which kind (or kinds) of tools are best for you. This class is taught by Matthew Card, Milk Street's Food Editor and resident knife aficionado.
